We love pizza and make it every now and then with buckwheat flour but it takes some time. Plantain pizza is so incredibly easy and unlike cauliflower pizza crust it actually resembles Italian pizza crust with its texture. Just one plantain provides you with 45% DV in vitamin C! Green or yellow?
Green plantains give best results. I tested yellow plantain crust but it was too sweet and the texture wasn’t as great as with green ones.
What age? 6 m+
- • 1 green plantain
- • 2 tablespoons olive oil
- • 1/4 teaspoon salt
- • pinch of black pepper, turmeric and oregano
- • 1 tablespoon tomato sauce
- • any toppings you like [ours: 1 slice turkey roast, 1/2 leek & 1/3 skinless egg plant (cooked in ghee for few minutes), 1 slice goat cheese, 1 tbs nutritional yeast, a little fresh lovage & spinach]
- 1. Preheat the oven to 180°C.
- 2. Peel and slice plantain. Blend with oil and spices.
- 3. Spread the batter into the prepared pan [lined with slightly greased parchment paper]. Bake at 180°C for 20 minutes. Add toppings starting with tomato sauce. bake for another 10 minutes or longer if not crispy enough. Take out the pan from the oven and holding the parchment paper transfer to wire rack and cut in smaller pieces. Use silicone spatula to transfer the pieces on the plates. It serves 2 but with the toppings we had and salad the three of us were full.
- Finio took off the toppings and ate the crust 😉 I might bake the crust next time and serve with some meat and veggies.
