How to make tahini without a powerful blender? BLW

Finio and I love tahini! It’s difficult to buy it without sugar and my blender can’t cope with grinding tiny sesame seeds … I recently purchased an electric coffee grinder so I can turn ANYTHING into a flour! Huray! So my tahini is simply freshly ground sesame flour with the addition of a good quality cold-pressed oil such as walnut / sesame or olive oil + honey and savoury version is with garlic, lemon and salt.

Sweet tahini is perfect for layering cookies such as homemade oreo or cakes.

Why eat tahini?

Sesameseeds are especially high in copper, manganes, calcium, magnesium and vitamin E. It has been shown to boost bone mineral density. Sesame oil is know for healing dameged skin. I’ve read somewhere (can’t find the source though!) that it cures migraines.

However, Dr. Paul Pitchford is skeptical about introducing tahini to your everyday diet. Sesame butter is produced from whole sesame seeds ground into a paste whereas tahini is made from shelled seeds. Thus, tahini lacks fiber and many minerals and should be eated occasionally. Dr Pitchford recommends grinding sesame seeds immediately before eating because it facilitates the digestion.

What age? There are so many kids allergic to sesame so when you’re introducing it do it in the morning and offer just a little.

Wykonanie
  1. 1. You can slightly roast sesame on a heated skillet but you can simply skip this step. Roasting brings out aroma and flavor. Be careful not to over-roast! The seeds should be just a little golden at the bottom. They can't be brown or black! They will get bitter and the oil (inside the seeds) will transform into harmful trans fat. Cool the roasted seeds before grinding.
  2. 2. Grind seeds in the coffee grinder (I use an electric grinder from Bosch) which won't take up more than 1 minute. Sesame seeds contain a lot of fat so some of the ground sesame seeds will stick to your grinder. You just need to scrape it off with a spoon or spatula.
  3. 3. Place the sesame flour in a bowl or a jar and add all the ingredients (sweet OR savory) and stir. Oil should be added gradually so that you reach the desired consistency. You can store it for a month in your fridge.
